About the Recipe
Eating dates can help soften your cervix before labour begins. Most of the time, it's best to begin eating 4-6 dates per day around 35 weeks. Check with your care provider if you have any concerns. Otherwise, dates are delicious. They are a great source of fiber and natural sugars. These can be a wonderful treat!
Ingredients
15 pitted dates
peanut butter
1-2 cups of melted chocolate chips, either semi-sweet, milk chocolate or a mix.
Preparation
Step 1
Line a cookie sheet with parchment paper. You will need a spoon for the peanut butter and a paring knife to slice the dates. Slice each date on one side to create an opening to fill with peanut butter. Don't over fill the pocket, each date may take about 1/2 tsp. This is the messy part! I liked wearing disposable gloves. Place filled dates on the cookie sheet.
Step 2
Melt chocolate chips in the microwave until fully melted. Stir frequently. In my microwave, I did 30 sec bursts, stiring in between for a total of 2 mins. Use a clean spoon to drizzle melted chocolate over the top of each date. Eat the left over chocolate.
Step 3
Chill the tray of dates for 3-4 hours in the fridge or 1-2 hours in the freezer. Then, tranfer to a glass container and store in the fridge for up to 1 week. If they last that long!
