About the Recipe
Many moms choose dates around 35 weeks to help soften their cervix in preparation for labour. These are also a great labour or postpartum snack! Plus they taste like a treat!
Ingredients
15 pitted dates
1/2 cup of peanut butter
1/2 cup of dried apriocots
1 TBSP chia seeds
1 TBSP shredded coconut
1 cup of rolled oats
pinch of salt
1/2 tsp of vanilla
pinch of cinnamon
1/2 cup chocolate chips (optional)
Preparation
Step 1
If your dates feel hard, soak them in warm water for 30 mins. Cover a cookie sheet with parchment paper. Fit food processor with blade. You may want disposable gloves, this recipe is sticky!
Step 2
Discard the water from the dates. Add all ingredients to food processor, pulse until mixture is well combined and the dates and apriocots are well blended. Mixture should be sticky.
Step 3
Roll out date balls. Each ball should be about 2 TBSP. I find using a cookie scoop works really well. Evenly space the balls on the cookie sheet. This recipe makes about 24 balls.
Step 4
Refridgerate for 3-4 hours or freeze for 1-2 hours to firm up. Then you can transfer balls to a container to store in the fridge. You can also make ahead and store in the freezer for up to 3 months.
